Snow and Crockpots

I had a moment, so I thought I would blog a bit.

We've had major snow here. I think we got 9"--that's huge for our area. We never usually get more than 4". I love being at home, but I love it even more when it snows. I haven't felt "cabin fever" or any of that. I'm sure it has something to do with a) living in the country already and being used to staying at home and b) having newborn twins and not wanting to go anywhere anyways!

I'm cooking these days since I've used up most of the frozen meals I had. I'm still dairy-free, caffeine-free, and chocolate-free. I've needed to find meals that fit my diet and my husband's (South Beach--low carb). But, on top of our dietary needs, I have needed to find FAST, EASY, and DELICIOUS meals--a lot to ask for, I know. I have turned to my trusty crockpot. It has been great. I am using recipes from this blog--A Year of Slow-Cooking. I love it!

Here are a few of the recipes we are trying:

Peanut Butter Chicken (loved it)
Indian Chicken (will substitute the cream with coconut milk)
Chicken Enchilada Chili
Thai Beef

  4. About your hair, you look SO GOOD with super short hair. You pull it off and it is adorable on you.

    However, you are so stinkin' cute you would look cute with longer hair too. And it would look really pretty on you if you wore it wavy and natural.

    So I say if you want to grow it out do! One day when you're pms-ing you'll cut it off and the cycle will begin again :), haha!

    Crock pot recipes....I made an amazing, so so yummy beef stew last week.

    3 lb package of stew meat
    potatoes
    carrots
    2 pkg Lipton Onion Soup Mix
    1 pkg Beef Stew seasoning (looks like a taco seasoning or chili packet, you know what i'm sayin?)

    Spray Pam in your crock pot so you don't have to scrub like the dicken's to clean it when you are done. Cover the meat with some flour and brown it. Add it to the crock pot with cubed potatoes, carrots and the seasoning packets. Add 3 cups of water (a little more if you want more gravy sauce). Cook on low all day.

    The flavor is out of this world good.

    It makes A LOT! So you can reheat it the next meal like soup. Then the next time you can put it in a 9x13 type pan and put a layer of biscuits on top to make a pot pie.

  5. and when I say soup I meant to say stew. This is a thick, hearty dinner.

    I like it because you can make a big batch and not have to cook again for several meals.
